Corny Cookies Diabetic Recipe

These cookies contain uncooked cornstarch, which is absorbed slowly by the body. They might help prevent nighttime hypoglycemia.

Ingredients:
3/4 cup peanut butter
3 tablespoons honey
1/4 cup cornstarch
2 cups cornflakes

Stir together peanut butter, honey and cornstarch.

Form into balls, about 1-tablespoon in size, and roll in cruched cornflakes.

Flatten balls with a tumbler and chill.

Recipe makes 12 cookies.
