Speedy Chive Potatoes Diabetic Recipe
Ingredients:
1-1/3 cups instant mashed potato flakes
1/2 cup low-fat (1 percent fat) buttermilk
2 tablespoons chopped fresh chives
OR
Finely chopped green onion tops
1/4 teaspoon freshly ground pepper

Directions:
Bring 1 cup water to a boil in a small saucepan.
Stir in the
remaining ingredients; remove from the heat.
Cover and let
stand 2 minutes; stir with a fork.
Makes: 2 cups (4 Servings, 1/2 cup each)
