Speedy Chive Potatoes

Mashed potato flakes speed up this dish. Add buttermilk, fresh chives, green onion tops and freshly ground black pepper for a great side dish.

Recipe Ingredients

1-1/3 cups instant mashed potato flakes
1/2 cup low-fat (1 percent fat) buttermilk
2 tablespoons chopped fresh chives
OR
Finely chopped green onion tops
1/4 teaspoon freshly ground pepper

Speedy Chive Potatoes

Recipe Directions

Bring 1 cup water to a boil in a small saucepan.

Stir in the remaining ingredients; remove from the heat.

Cover and let stand 2 minutes; stir with a fork.

Recipe makes 2 cups Speedy Chive Potatoes.

Bonus: Garlic Mashed Potatoes

Recipe Ingredients

2 pounds red or Idaho potatoes, quartered, not peeled
1/2 cup milk
1/2 cup Miracle Whip lite dressing
3/4 teaspoon garlic powder
Salt and pepper
*Or substitute two to three cloves garlic, minced, for garlic powder

Recipe Directions

Cover potatoes with water in large saucepan. Bring to boil; reduce heat to medium. Cook 20 minutes or until potatoes are tender. Drain. Mash potatoes. Add milk, dressing and garlic powder; beat until fluffy. Season to taste with salt and pepper. Recipe makes eight servings.
