Peanut Butter And Banana Cookies

Peanut butter and banana go so well together and these cookies are no exception! A little apple juice concentrate and chopped peanuts puts these over the top.

Recipe Ingredients

1/4 cup butter or margarine
1/2 cup mashed bananas
1/2 cup peanut butter
1 egg
1/4 cup thawed, frozen unsweetened apple juice concentrate
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup salted peanuts, chopped whole peanuts; optional

Recipe Directions

Batch of Cookies Preheat oven to 375 degrees.

Beat butter in large bowl until creamy. Add banana and peanut butter; beat until smooth. Blend in egg, apple juice concentrate and vanilla. Beat in flour, soda and salt. Stir in chopped peanuts.

Drop by teaspoonfuls onto lightly greased cookie sheets; top each with a whole peanut. Bake 8 min. or until set. Cool on rack and store in tightly covered container.

Bonus: Healthy Banana Cookies

Recipe Ingredients

3 ripe bananas
1 cup dates, pitted and chopped
2 cups rolled oats
1/3 cup vegetable oil
1 teaspoon vanilla extract

Recipe Directions

Preheat oven to 350-degrees. In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 20 minutes in the preheated oven, or until light brown.
