Peanut Butter Balls

Diabetic Friendly Recipe

Cornstarch, peanut butter, Rice Krispies, semisweet chocolate chips, Equal and cold water mix together to make these satisfyingly sweet peanut butter balls.

Recipe Ingredients

8 tablespoons of corn starch
8 tablespoons of peanut butter
1 ounce of Rice Krispies
1 tablespoon of semisweet chocolate chips (1 ounce)
1-1/2 tablespoons of Equal sweetener
2 ounces cold water

Recipe Directions

Peanut Butter Balls Place ingredients in a bowl and mix. Form into eight round balls of equal size and refrigerate.

Bonus: Peanut-Butter Squares

Recipe Ingredients

Oil and flour aerosol spray
One large egg
1/4 cup all natural peanut butter
1 cup ripe mashed banana
1/4 cup skim milk
1 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup chopped dry-roasted peanuts

Recipe Directions

Preheat oven to 350-degrees. Spray an 8-inch square baking pan with aerosol spray. In the bowl of an electric mixer, beat together the egg, peanut butter and banana until smooth. Beat in the milk and flour, baking soda and powder, and then stir in the peanuts. Spread the batter evenly in the pan. Bake for 30 minutes until browned. Cool and cut into 24 squares. Recipe makes 24 squares.
