Mini Rice Cake Tartlets

Use mini rice cakes with pineapple yogurt spread and assorted fruit of your choice, cut up for a healthful and low calorie, low fat snack packed with nutrients.

Recipe Ingredients

Mini Rice Cakes
1/2 cup pineapple yogurt spread
Assorted fruit, cut-up into small pieces

Suggested fruits:

  1. Mandarin orange segments
  2. Blueberries
  3. Pineapple tidbits
  4. Strawberries
  5. Bananas
  6. Kiwifruit

Recipe Directions

Mini Rice Cakes Spread teaspoonful of yogurt spread on each rice cake; top with fruit. Serve immediately.

Recipe Ingredients

One large celery rib, washed
3 tablespoons reduced-fat cream cheese
12 dark raisins

Recipe Directions

Fill the celery with the cream cheese. Top with the raisins. Cut into four "logs" and serve. Recipe makes two servings.
