Diabetic Friendly Recipe

Cookie brittle is kind of a candy-cookie recipe. Sugar is kept down with granulated sugar replacement but with the natural goodness of chocolate chips and walnuts and you can't tell.

Cookie Brittle

Recipe Ingredients

1/2 cup margarine
2 teaspoons vanilla
1 teaspoon salt
3 tablespoons granulated sugar replacement (such as Stevia)
2 cups flour (sifted)
1 cup semi-sweet chocolate chips
1/2 cup walnuts (chopped fine)

Recipe Directions

Combine margarine, vanilla, salt and sugar replacement in mixing bowl or food processor; beat until smooth.

Stir in flour, chocolate chips and walnuts.

Press into ungreased 15 x 10-inch pan.

Bake at 375-degrees for 25 minutes.

Remove from oven, score into 2 x 1-inch pieces and cool completely. Break into candy pieces.
