Whole Wheat Blueberry Kuchen

Recipe Ingredients
1/2 cup skim milk
3 tablespoons olive oil
1/2 cup plain or vanilla yogurt
1 cup unbleached flour
1 cup whole wheat pastry flour
3 tablespoons wheat germ
1 tablespoon baking powder
Pinch of baking soda
1/2 teaspoon salt
1/3 cup sugar
2 cups fresh blueberries
Recipe Directions
For topping combine the following:
1 tablespoon sugar
1/2 teaspoon cinnamon
2 tablespoons chopped walnuts
Directions:
Preheat oven to 400-degrees. Spray an 8-by-8-inch or 9-by-9-inch baking pan with nonstick cooking spray.
Beat in milk and add vanilla bean.
Stir in berries. Pour batter into prepared pan.
Set a strainer on top of same bowl and add all dry ingredients. Sift into liquid mix.
Sprinkle with topping. Bake 20 -25 minutes to golden brown Cool slightly on wire rack. Cut into nine slices and enjoy warm. Leftovers are good sliced crosswise and toasted.
