Whole Wheat Blueberry Kuchen Recipe
Diabetic Friendly Recipe
Healthy whole wheat blueberry kuchen uses pastry flour plus wheat germ. Combine with white flour in the dough.
1/2 cup skim milk
3 tablespoons olive oil
1/2 cup plain or vanilla yogurt
1 cup unbleached flour
1 cup whole wheat pastry flour
3 tablespoons wheat germ
1 tablespoon baking powder
Pinch of baking soda
1/2 teaspoon salt
1/3 cup sugar
2 cups fresh blueberries
For topping combine the following:
1 tablespoon sugar
1/2 teaspoon cinnamon
2 tablespoons chopped walnuts
Preheat oven to 400-degrees. Spray an 8-by-8-inch or 9-by-9-inch baking pan with nonstick cooking spray.
Beat in milk and add vanilla bean.
Stir in berries. Pour batter into prepared pan.
Set a strainer on top of same bowl and add all dry ingredients. Sift into liquid mix.
Sprinkle with topping. Bake 20 to 25 minutes to golden brown Cool slightly on wire rack. Cut into nine slices and enjoy warm. Leftovers are good sliced crosswise and toasted.
