Diabetic Friendly Recipe
Stewed Chicken with boneless skinless chicken breast halves in stewed tomatoes with mushrooms, onion, Italian seasoning, garlic, salt and pepper to taste plus mozarella cheese.
4 boneless chicken breast halves
16 ounce can Italian stewed tomatoes, cut in bite sized pieces
4 ounce can sliced salt free mushrooms
1 medium onion, sliced in rings
2 teaspoons Italian seasoning
2 teaspoons garlic, chopped
Salt to taste
Pepper to taste
Shredded fat-free Mozzarella cheese
Place chicken in baking dish. Top with tomatoes and their juice, mushrooms, onions and seasonings. Cover tightly with foil and bake at 350-degrees for one hour or until chicken is done.
Remove from oven and sprinkle with Mozzarella. Cover with foil until cheese melts.
Recipe makes 4 servings.
