Spicy Chicken Rice Soup with fat free chicken broth, chicken breast, celery, carrots, green pepper, onion and long grain rice. Salt and pepper to taste.

Spicy Chicken Rice Soup

Recipe Ingredients

4 cups fat free chicken broth
2 cups cubed cooked chicken breast
2 celery ribs, chopped
2 medium carrots, chopped
1 medium green pepper, chopped
1 medium onion, chopped
1/3 cup uncooked long grain rice
1/4 cup minced fresh cilantro or parsley
1/2 teaspoon dried oregano
1/2 teaspoon salt, optional
1/2 teaspoon black pepper
1/4 teaspoon ground cumin
1/8 to 1/4 teaspoon crushed red pepper flakes

Recipe Directions

In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 to 25 minutes or until rice and vegetables are tender.
