This is a simple, basic muffin recipe for Orange Juice Muffins. It creates muffins brimming with tangy orange flavor without being packed with unhealthy sugar.

Orange Juice Muffins

Recipe Ingredients

2 cups all purpose flour
7-1/4 teaspoons sugar substitute (such as Stevia)
2 teaspoons baking powder
1/8 teaspoon salt
1 cup orange juice
4 tablespoons margarine, melted
2 egg whites, slightly beaten or egg substitute equivalent to one egg
1 teaspoon grated orange rind

Recipe Directions

Combine flour, sugar substitute, baking powder and salt in a large bowl. Add orange juice, margarine, egg and orange rind. Mix well. Spray muffin tins with non-stick cooking spray. Fill tins 2/3 full.

Bake at 375-degrees for 20 to 25 minutes. Cool on wire rack.
