Banana Bread Recipe

Diabetic Friendly Recipe

A basic and very tasty banana bread made using measurable sweetener (such as Steviva) in place of cane sugar. Egg whites only and olive oil keep fat down while ripe bananas give this bread its naturally sweet goodness.

Recipe Ingredients

3/4 cup measurable sweetener
1/4 cup sugar
1/4 cup olive oil
1 egg
2 egg whites
1 teaspoon baking soda
2 cups flour
4 tablespoons milk
3/4 teaspoon vinegar
3 ripe bananas, mashed

Recipe Directions

Preheat oven to 350-degrees. Spray 9 x 5-inch loaf pan with non- stick cooking spray. Blend sweetener, sugar, and olive oil. Add egg whites and mix well. Sift flour and baking soda into bowl and stir.

Mix milk and vinegar together, then add to mixture. Fold in bananas. Bake one hour or until toothpick inserted in center comes out clean. Let cool.
