Sweet Creamy Cantaloupe dish is a cool healthful dessert. Creaminess comes from ricotta cheese and yogurt.
The orange color of cantaloupe's flesh relfects its extremely high beta-carotene content, which converts to vitamin A in the body; both are important for eye health. Cantaloupe is an antioxidant powerhourse, providing more than 100 percent of the Daily Value for vitamin A, as well as significant amounts of vitamin C, potassium, folate and fiber.
2 cups cubed cantaloupe
1/2 cup plain low-fat yogurt
2 tablespoons part-skim ricotta cheese
1 tablespoon frozen grape juice concentrate
Ground cinnamon, to taste
1 tablespoon slivered almonds
Place cantaloupe in a serving bowl.
Blend yogurt and ricotta; stir in grape juice.
Spoon over melon and top with a sprinkling of cinnamon and slivered almonds.
