Hot Cheese Bavarian

Diabetic Friendly Recipe

Rye bread, sauerkraut, cabbage, tomato and mozzarella make this this fantastic sandwich. Serve with crazy carrots, if desired. Recipe below...

Recipe Ingredients

2 slices rye bread, toasted
2 teaspoons butter or margarine
1/4 cup sauerkraut, well rinsed, drained
1/4 cup thinly sliced cabbage or rinsed, drained sauerkraut
1/2 medium tomato, sliced
4 ounces sliced reduced fat mozzarella cheese

Recipe Directions

Sauerkraut Spread bread with margarine. Top with combined sauerkraut, cabbage, sliced tomato, and cheese.

Broil 6-inches from heat source until golden and bubbly, three to four minutes.

Crazy Carrots

Recipe Ingredients

Crazy Carrots 2 pounds sliced carrots or small carrots
One can of (10-3/4 ounces) tomato soup
1-cup measurable sweetener or 24 packets
One medium onion, chopped
One green pepper, chopped
3/4 cup wine vinegar
1/2 cup olive oil
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon pepper
1 teaspoon Dijon mustard

Recipe Directions

Boil carrots until tender, drain. Combine remaining ingredients and pour over carrots. Mix well. Refrigerate in a covered container at least 12 hours. Recipe makes 12 servings.
