Chicken and Broccoli Skillet Recipe
Diabetic Friendly Recipe
A healthy Chicken and Broccoli Skillet main dish. Tender chicken breast halves with broccoli, onion, lemon pepper, thyme, garlic and halved cherry tomatoes. Low in fat, high in flavor.
2 cups broccoli, cut 3/4-inch pieces
1/2 cup onion, chopped
1/4 teaspoon lemon pepper
1/4 teaspoon thyme, dried and crushed
1/4 teaspoon cooking oil
1 clove garlic, minced
4 chicken breast halves boned and skinless (1 pound)
1 cup halved cherry tomatoes
Spray a cold large skillet with nonstick coating. Preheat skillet over medium heat.
Add broccoli, onion, lemon pepper, and thyme to skillet. Cook and stir for three to four minutes or till vegetables are crisp-tender. Remove vegetable when they are crisp-tender.
Remove vegetable mixture from the skillet; keep warm. Add oil and garlic to hot skillet.
Rinse chicken; pat dry. Add to skillet. Cook chicken over medium-high heat about ten minutes or until chicken is tender and not longer pink, turning once. Add cherry tomatoes. Cover and cook one to two minute or till heated through.
