Passion Fruit Cocktails
Passion-Fruit Champagne Cocktail

Ingredients:
1/2 ounce (1 tablespoon) gin
1/2 ounce (1 tablespoon) Alize (passion-fruit liqueur)
6 tablespoons chilled dry champagne
Garnish: raspberries
Directions:
In a champagne flute combine gin and liqueur and top off with champagne. Garnish drink with berries. Makes one drink.
Passion Daiquiri
Ingredients:
1 1/2 ounces light rum
1/2-ounce passion fruit juice
2 tablespoons lime juice
1 teaspoon superfine sugar
3 or 4 ice cubes
Directions:
Combine all ingredients in a cocktail shaker and shake vigorously. Strain into a cocktail glass. Serves 1
Grand Passion
Ingredients:
2 ounces gin
1 ounce passion fruit nectar
Dash Angostura bitters
Three or 4 ice cubes
Directions:
Combine all ingredients in a mixing glass and stir well. Strain into a cocktail glass. Recipe serves one.
Hurricane Passion
This recipe is a standard one for Hurricanes, with the addition of some sugar to compensate for the tartness of fresh lime juice. Passion fruit syrup can difficult to find. We located a bottle by contacting a distributor, Fee Brothers. Because the syrup is hard to come by (and artificially flavored) you can create a substitute for it: a tablespoon of passion fruit sorbet (Haagen Dazs makes one) and a teaspoon of grenadine, per serving.
Ingredients:
1 ounce light rum
1 ounce dark rum
1 tablespoon passion fruit syrup
Juice of 1/2 lime
1 teaspoon superfine sugar, or to taste
Ice cubes
Directions:
Mix all ingredients except ice in shaker. Stir to dissolve sugar. Add ice cubes, shake well, and strain mixture into a cocktail glass. Recipe serves one.
Pink Passion
Ingredients:
1/2-cup passion fruit juice
1/4 cup Grand Marnier
2 tablespoons vodka
2 teaspoons grenadine, chilled
Directions:
Stir together juice, Grand Marnier, and vodka in a 2-cup measure, then pour into cocktail shaker filled with ice. Shake well, then strain into 2 Champagne flutes. Add 1 teaspoon grenadine to each cocktail (grenadine will sink to bottom of glass). Recipe makes two servings.
Passion-Fruit Mimosa
Ingredients:
1 cup chilled champagne
1/2 cup chilled passion-fruit nectar or juice
Directions:
Divide champagne between 2 glasses and top off each drink with nectar or juice (3 to 4 tablespoons). Recipe makes two drinks.
Passion Fruit Margarita
If fresh passion fruit is not available, substitute 3 cups passion-fruit nectar, frozen in ice-cube trays, for the strained fresh passion-fruit puree and, when ready to blend, omit the ice cubes.
Ingredients:
1 pound fresh passion fruit (about 12)
3 cups ice cubes
3/4 cup white tequila
1/4 cup sugar
Directions:
Halve passion fruits and scoop pulp and seeds into a blender. Blend pulp briefly (seeds should still be in large pieces). Force the fruit through a fine sieve into a measuring cup and discard the solids. In a blender, blend 1/2-cup puree with remaining ingredients until smooth. Pour drink into four stemmed glasses. Recipe serves four.
Frozen Papaya and Passion Fruit Rum Cocktail
Ingredients:
1 cups light rum
4 1/2 cups chopped peeled papaya (2 pounds)
1 cup thawed passion-fruit puree
2/3 cup superfine granulated sugar, or to taste
4 cups ice cubes
Directions:
Blend rum, papaya, passion fruit, sugar, and ice in two batches in a blender until smooth. Serve immediately. Recipe makes six drinks.
Passion-Fruit Champagne Cocktail
Ingredients:
1 cup chilled passion fruit blend nectar
1/2 teaspoon Angostura bitters
1 cup chilled champagne or other sparkling white wine
4 fresh raspberries or small strawberries
One orange slice cut in half
Directions:
Divide nectar and bitters between 2 chilled champagne flutes. Add champagne. Drop two berries into each drink. Garnish with orange. 2 Servings; Can be doubled.
