This tofu rice salad recipe lends itself well to a small amount of ginger powder or grated fresh ginger. Olive oil is the "good" oil often referred to as "liquid gold".

Tofu for Tofu Rice Salad

Recipe Ingredients

1 cup diced tofu
4 cups cooked brown rice or quinoa
1/2 cup pine nuts or chopped pecans, or a combination of these
3/4 cup golden raisins, plumped in hot water and drained
1/2 cup chopped green onions
1/3 cup olive oil
1/4 cup rice vinegar
2 tablespoons light soy sauce or tamari sauce
1/4 teaspoon black pepper
Lettuce leaves
Paprika
Parsley or coriander

Recipe Directions

Toss ingredients, chill one hour. Arrange on lettuce leaves and sprinkle with paprika; garnish with parsley or coriander.

Recipe Notes

  1. The beauty of this salad is that not only can it be made in advance, but it must be made ahead of time.
  2. Use extra firm tofu. This recipe lends itself well to a small amount of ginger powder or grated fresh ginger.
  3. You can use 2 or 3 teaspoons sesame oil and then add olive oil to make 1/3 cup. You can also skip the oil and vinegar and use a soy "mayonnaise." Recommended: Hampton Creek, Just Mayo, Original, Gluten Free, Soy Free, Egg Free. Find it at health food stores, web sites or on Amazon.
