Pumpkin Spice Muffins

Raw honey sweetens these tender muffins while the pumpkin itself and the addition of applesauce makes them super moist. Spices give them the finishing touch.

Recipe Ingredients

2 eggs (or one egg and two egg whites)
1/4 cup olive oil
1/2 cup raw honey
1/4 cup unsweetened applesauce
1 cup mashed, cooked pumpkin
1-1/2 cup brown rice flour
1/2 cup soya flour
1 teaspoon gluten free baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon allspice
Dash salt
1/2 cup chopped raisins (optional) and/or nuts

Recipe Directions

Muffin Preheat oven to 350-degrees.

Beat eggs well; add honey, oil and pumpkin. Add dry ingredients and mix well.

Stir in raisins and nuts. Fill paper-lined or greased muffin cups 2/3 full.

Bake at 350-degrees degrees for 20 minutes. Rotate tins once to brown evenly.
