Shepherds Meatloaf Recipe

Similar to shepherd's pie, Shepherds Meatloaf is made in meatloaf form. Ground round, diced onions, salt, potato, egg, garlic and mushrooms baked into a scrumptious loaf.
1 pound ground round
2 tablespoons diced onions
1 teaspoon salt
1 cooked (medium) potato, mashed
1/2 teaspoon garlic powder
1/2 pound fresh mushrooms (sliced or one can drained)
In an 8-inch loaf pan, mix ground round, onion, salt, potato, garlic powder and egg, thoroughly and form loaf.
Firmly press mushroom slices over entire surface of loaf.
Bake at 350 degrees for about one hour. Slice and serve.
- For the best meat flavor, use 90 percent (or more) fat free lean ground round. Ground sirloin at 90 percent fat free is also very good. You save fat and calories and have a much better tasting meat loaf.
- To quickly cook a fresh potato, place it into your microwave. Cook in high 7 to 8 minutes, depending on size of the potato. Turn it over and cook another 7 to 8 minutes. If you have a very large potato, go with the 8 minutes.
