Celiac disease is a disorder that damages the lining of the intestines as a reaction to gluten, a protein found in wheat, rye, barley and oats. Consequently, those who suffer from this must go on a gluten-free diet, which can be quite the challenge.

A gluten-free diet means avoiding all foods that contain wheat (including spelt, triticale, and kamut), rye, barley, and possibly oats - in other words, most grain, pasta, cereal, and many processed foods. Despite these restrictions, people with celiac disease can eat a well- balanced diet with a variety of foods, including bread and pasta. Our recipes WILL help!

A Note on Spelt
From the Spelt.com Web site:  Naturally high in fiber; contains significantly more protein than wheat. Spelt is also higher in B complex vitamins, and both simple and complex carbohydrates. Another important benefit is that some gluten-sensitive people have been able to include spelt-based foods in their diets. Spelt is an ancient grain, dating back to biblical days. It is low in gluten and may be tolerated by some gluten-sensitive individuals. If you fear it could harm you, do avoid recipes using it.
