Whipped Cream Cake Recipe
Gluten Free Recipe
Whipped Cream Cake is really made with whipping cream in the batter. Vanilla lends just the right amount of flavor for this creamy cake.
1-1/2 cup super fine gluten-free white rice flour
2 teaspoons gluten-free baking powder
1/2 teaspoon salt
1 cup whipping cream
2 eggs or egg substitute
1 cup sugar
1/4 teaspoon gluten-free vanilla powder
Preheat oven to 350-degrees.
Into medium bowl, sift together White Rice Flour, Gluten-Free Baking Powder and salt. Set aside.
In another bowl, beat whipping cream until stiff.
Add eggs, sugar and vanilla extract OR the Gluten-Free Vanilla Powder and continue beating.
Mix in dry ingredients.
Spread in greased 8-by-8-inch pan.
Bake in preheated oven 30 to 35 minutes or until cake springs back when pressed with finger. Remove Whipped Cream Cake from oven and cool in pan on rack.
Top as desired.
Recipe makes 8 servings.
