Cranberry Pancakes
Dry ingredients:
1/2 cup white rice flour
1/2 cup quinoa flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup coarsely ground, or finely chopped pecans
1/2 cup dried cranberries (or fresh blueberries if preferred)
Wet ingredients:
One whole egg and one egg white
2/3 cup milk
1/2 cup applesauce
2 tablespoons oil
Directions:
Mix dry ingredients in a bowl and set aside.
Whip wet ingredients in a blender for about a minute.
Pour wet indredients into dry ingredients and stir until well blended.
Pour batter from tip of a large spoon onto hot griddle. Turn pancakes as soon as they are full of bubbles and cook until done.
