Cornflake Coconut Chews

Ingredients:
5 cups gluten-free cornflakes (no malt derivatives)
3-3/4 cups coconut
2 cups sugar
1-1/2 cups chocolate chips
Five eggs, beaten until thick
2-1/2 teaspoons vanilla extract

Directions:
Preheat oven to 350-degrees.

In a large bowl, mix together cornflakes coconut, sugar and chocolate chips.

In another bowl, beat eggs and vanilla until thick.

Pour over cereal mixture and let sit five minutes.

Mix again and then use teaspoon to drop mixture onto greased cookie sheets.

Bake in preheated oven nine to ten minutes, or until light brown.

Allow cookies to cool two to three minutes to set before removing them from cookie sheets.

Recipe makes three to four dozen cookies.
