Cornflake Coconut Chews

Recipe Ingredients
5 cups gluten free cornflakes (no malt derivatives)
3-3/4 cups coconut
2 cups sugar
1-1/2 cups chocolate chips
5 eggs, beaten until thick
2-1/2 teaspoons vanilla extract or 3/4 teaspoon Gluten-Free Vanilla Powder
Recipe Directions
Preheat oven to 350-degrees.
In a large bowl, mix together gluten free cornflakes coconut, sugar and chocolate chips.
In another bowl, beat eggs and vanilla or Gluten-Free Vanilla Powder until thick. Pour over cereal mixture and let sit five minutes.
Mix again and then use teaspoon to drop mixture onto greased cookie sheets. Bake in preheated oven nine to ten minutes, or until light brown.
Allow cookies to cool two to three minutes to set before removing them from cookie sheets.
Recipe makes 3 to 4 dozen Corn Flake Coconut Chews.
