Cornflake Coconut Chews Recipe

Make these crunchy satisfying Cornflake Coconut Chews with gluten free corn flakes containing no malt derivatives. If you prefer to avoid using whole eggs, try a gluten free egg substitute.
5 cups gluten free cornflakes (no malt derivatives)
3-3/4 cups coconut
2 cups sugar
1-1/2 cups chocolate chips
5 eggs, beaten until thick
3/4 teaspoon gluten-free vanilla powder
Preheat oven to 350-degrees.
In a large bowl, mix together gluten free cornflakes coconut, sugar and chocolate chips.
In another bowl, beat eggs and vanilla or Gluten-Free Vanilla Powder until thick. Pour over cereal mixture and let sit five minutes.
Mix again and then use teaspoon to drop mixture onto greased cookie sheets. Bake in preheated oven nine to ten minutes, or until light brown.
Allow cookies to cool two to three minutes to set before removing them from cookie sheets.
Yield: 3 to 4 dozen
Variation: Cleansing Coconut Nut Balls
A delicious, nutritious, and high fiber recipe.
1 cup raw, unsalted almonds or walnuts, ground
1 cup unsweetened coconut flakes
1 cup raw almond butter
2 tablespoons pure maple syrup
Additional ground nuts or coconut
Mix all the ingredients, except additional ground nuts or coconut, together in a food processor. Form into small balls and roll in the ground nuts or coconut.
