Grated Carrots Recipe
Gluten Free Recipe
Only five ingredients in this simple side yet very healthful side dish of grated carrots. A little sugar, rice wine vinegar and seasonings of salt and pepper.
1-1/2 cup grated carrots (three medium)
1 teaspoon sugar
1 tablespoon rice wine vinegar
Salt and fresh ground pepper to taste
Peel and grate carrots.
Toss with vinegar and sugar. Add salt and pepper to taste.
Let marinate for 15 to 30 minutes and serve Grated Carrots with meal.
Variation: Glazed Carrots with Nuts
Making an impressive 5-minute side dish simply doesn't get any easier than this! You can use pecans in place of the walnuts and pure maple syrup in place of the brown sugar.
3 cups baby carrots
2 tablespoons butter
3 tablespoons chopped walnuts
1-1/2 tablespoons brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon salt
1/8 teaspoon pepper
Put the carrots in a medium saucepan and cover them with water. Boil until they are tender but not mushy. Drain. While the carrots are draining, melt the butter in the same saucepan and add the walnuts.
Saute the nuts for 1 minute, and then add the sugar, cinnamon, salt, and pepper. Stir to combine. Stir in the carrots until they are evenly coated with the glaze. Makes 4 servings.
