Gluten Free Recipe

2 cups applesauce
2 cups sugar
1 teaspoon baking soda
2 cups flour mix (1-cup potato, 1/2-cup tapioca, 1/2-cup chana or light buckwheat)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 teaspoon Gluten-Free Baking Powder
1 cup sultanas or Thompson seedless raisins (optional)
1 cup chopped nuts (optional)
1/2 cup vegetable oil or melted shortening
Preheat the oven to 350-degrees. Prepare a 9 x 13-inch pan by spraying with a safe vegetable coating or by greasing it and then dusting with gluten-free flour.
In a bowl, gently blend applesauce, sugar and soda together. In a second bowl, sift together the remaining dry ingredients several times to add air into the flour. Blend the dry ingredients into the applesauce and sugar mixture in small amounts. With the last amount of dry ingredients add the raisins and nuts. Finally, blend in the vegetable oil.
Bake for 45 to 50 minutes, or until the Applesauce Cake springs back when lightly touched.
One of our visitor's has what sounds to be a wonderful tip/suggestion for making this cake. Roy says:
"On my third attempt to make your gluten free applesauce cake, I added a little more than a teaspoon of guar gum and it came out very good. Is it possible that guar or xantham gum should be included in the recipe? I notice it as a common ingredient in many if not most gluten free baking recipes."
As for our side of this matter, our original copy does not include the guar gum and our gluten-free tester made no comment about it, so we very much appreciate Roy's helpful suggestion!
