Apple Cake & Apple Cobbler Recipes

This recipe bakes up a quick, delicious apple cake and apple cobbler using gluten free flour. Spiced with cinnamon.
1-3/4 cup sugar
1 cup oil and mix until creamy.
2 cups gluten free flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon gluten-free vanilla powder
1 teaspoon xanthan gum
Mix dry ingredients into egg mixture.
2 cups sliced apples
1 cup chopped nuts
Batter will be stiff. Turn into 9 x 13-inch pan sprayed with nonstick cooking spray. Bake at 375-degrees for 40 to 45 minutes. Top with powdered sugar if you wish.
Variation: Apple Cobbler
Serve this warm or at room temperature and with or without ice cream, it's delicious either way. For added decadence, drizzle the top of the warm pie with a sugar glaze made from a mixture of sifted confectioners' sugar, vanilla, milk, and a dash of cinnamon.
Nonstick cooking spray
7 cups peeled, thinly sliced Red or Golden Delicious apples (6 to 7 apples)
1/4 cup plus 1/2 cup brown sugar
1/2 cup granulated sugar
2 tablespoons cornstarch
1/4 teaspoon plus
1/4 teaspoon salt
1/2 teaspoon plus
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons bottled lemon juice
1/2 cup gluten-free flour mixture
1/2 cup almond meal
1 cup chopped pecans
6 tablespoons butter, melted
Preheat the oven to 350 degrees. Spray a 10 inch pie plate with cooking spray.
Place the apple slices in a medium bowl. Stir in 1/4 cup of brown sugar, the granulated sugar, cornstarch, 1/4 teaspoon of salt, 1/2 teaspoon of cinnamon, the nutmeg, and lemon juice. Spoon the mixture into the prepared pie plate.
Tip: Pie plates vary in how many cups of filling they can hold. If you do not have a 10 inch pie plate, you can use a 9 x 9 inch pan or a deep-dish 9 inch pie plate.
Variation: You can use canned gluten-free blueberry, cherry, or peach pie fillings in place of the apple pie filling.
