Amaranth Baking Powder Bread Recipe

Amaranth Baking Powder Bread. Amaranth flour along with brown rice (or whole wheat) flour, sea salt, soy milk or water and a bit of honey for sweetening. If you use rice flour, be sure to not to forget the addition of egg whites noted below.
1 cup amaranth flour
1-1/2 cup brown rice flour OR whole wheat flour
1 tablespoon gluten-free baking powder
1 tablespoon sea salt (optional)
1 cup milk (or soy milk or water)
3 tablespoons honey
2 tablespoons unrefined vegetable oil
If Using Rice Flour:
2 egg whites beaten
Mix dry and liquid ingredients separately; beat egg whites, then combine all ingredients.
Pour batter into well-oiled 8-inch x 4-inch bread pan.
Bake at 350 degrees about 45 minutes.
Cool 10 minutes in pan before removing bread to a cooling rack.
Yield: 1 8-inch loaf
