Nut and Seed Muesli Recipe

This Nut and Seed Muesli is rich in both fiber and nutrients, so just a small serving will keep you satisfied. This recipe uses a selection of preservative free dried fruit - apple, strawberries, wild figs and pineapple - but you can use any preservative free dried fruit of your choice. Serve with soy or rice milk and a dollop of soy yogurt if you like, topped with some fresh fruit such as berries, mango or banana. If you can eat oats (they are not gluten-free), you could use 1 cup of oats in place of puffed rice. This recipe is gluten free, dairy free and detox friendly!
2-1/2 cupsrice bran flakes
1 cuppuffed rice
1 cupwhole buckwheat
1 cupflaked coconut
1 cupflaked almonds
1 cupfirmly packed chopped preservative free dried fruit
1/2 cupBrazil nuts, sliced
1/2 cupraw pepitas (pumpkin seeds)
1/2 cupsunflower seeds
1/2 cup flax seed
1/2 cup lecithin granules
Combine all ingredients in a large airtight container.
Muesli will keep in an airtight container in a cool cupboard for up to 2 days.
- Muesli mixture will keep in an airtight container in refrigerator for up to 2 months.
- Add the nuts and seeds just before serving.
Recipe makes 9-1/2 cups
