Chocolate Truffles

These chocolate truffles have the addition of cream cheese and graham crackers along with the standard powdered sugar and almonds, which are optional. Having said that, however, note that almonds are extremely nutrient-rich; a handful (one-ounce or about 23 almonds) is an excellent source of vitamin E. Almonds are also rich in protein (6 grams per ounce), as well as magnesium and manganese and area good source of copper, fiber and the B vitamin riboflavin.
Recipe Ingredients
1 ounce unsweetened chocolate
4 teaspoons low fat cream cheese
1/4 cup graham cracker crumbs
4 teaspoons powdered sugar substitute
1 tablespoon ground almonds
Recipe Directions
Melt chocolate in small bowl over pan of hot water; remove from heat. Beat in cream cheese. Add graham cracker crumbs and sweetener; mix well.
Refrigerate until chilled. Form into nine small balls.
Roll in ground almonds to coat.
Store in cool place. Serve at room temperature.
