Chocolate Truffles Recipe
Dietary Candy Recipe
These chocolate truffles have the addition of cream cheese and graham crackers along with the standard powdered sugar and almonds, which are optional. Having said that, note that almonds are extremely nutrient-rich; a handful (one-ounce or about 23 almonds) is an excellent source of vitamin E. Almonds are also rich in protein (6 grams per ounce), as well as magnesium and manganese and area good source of copper, fiber and the B vitamin riboflavin.
1 square unsweetened chocolate
4 teaspoons low fat cream cheese
1/4 cup graham cracker crumbs
4 teaspoons powdered sugar
1 tablespoon ground almonds
Melt chocolate in small bowl over pan of hot water; remove from heat. Beat in cream cheese. Add graham cracker crumbs and sweetener; mix well.
Refrigerate until chilled. Form into nine small balls.
Roll in ground almonds to coat.
Store in cool place. Serve at room temperature.
Yield: 9 truffles (4-1/2 servings)

Grandma's Chocolate Creams Recipe
"Put three squares of chocolate in a dish over a tea kettle to melt. Boil two cups of white sugar, one cup of water, one teaspoonful glucose until stringy; beat until creamy. Mold into the desired shapes and dip in chocolate. Put on whole nuts if desired."
