Fruit Candy

Pitted dates, raisins and orange juice make up the fruity flavors while sunflower seeds and ground nuts add a nice crunch.

Recipe Ingredients

1-1/4 cups ground peanuts
3/4 cup sunflower seed meal
1/2 cup seedless raisins, chopped
1/2 cup pitted dates, chopped
1/4 cup orange juice

Recipe Directions

Mix to soften dates, then mash well. Mix ingredients very well, blending to a paste. Add honey if extra sweetening is desired. Add wheat germ if not firm enough. Chill. Roll Fruit Candy into balls in coconut or sesame seeds.

 

Variation: Fruit Candy Bars

Recipe Ingredients:

One envelope unflavored gelatin
1/4 cup water
1 cup dried apricots
1 cup raisins
1 cup pecans
1 tablespoon flour
2 tablespoon orange peel (grated)
1 teaspoon rum extract

Recipe Directions:

Sprinkle gelatin over water; allow to soften for five minutes. Heat and stir until gelatin is completely dissolved. Combine apricots, raisins, pecans, flour and orange peel in blender or food processor, working until finely chopped. Add to gelatin mixture. Add rum extract and stir to completely blend.

Line 8-inch square pan with plastic wrap or waxed paper. Spread fruit mixture evenly into pan, and set aside to cool completely until candy is firm. Turn out onto cutting board, cut into 24 bars and wrap individually. Recipe makes about 24 bars. Serving size: 1 bar.
