No-Bake Peanut Butter Munchies

Great for summertime, these no bake crunchy peanut butter snacks are reduced in fat and include healthful raisins instead of chocolate chips.

Recipe Ingredients

2 tablespoons butter
2 tablespoons creamy reduced-fat peanut butter
3 cups miniature marshmallows (about 6 ounces)
2-1/2 cups low-fat granola
3 tablespoons dark raisins

Recipe Directions

Spray an 8-inch square baking pan with vegetable cooking spray. Set aside.

In a large saucepan, combine butter and peanut butter. Cook peanut butter mixture over low heat, stirring frequently, until melted and smooth, about 1 minute.

Add marshmallows; cover and cook, stirring occasionally, until marshmallows melt, about 5 minutes. Remove from heat.

Stir in granola and raisins. Spread mixture into prepared pan and cool. Cut into squares.

Bonus Recipe: Peanut Candy

Recipe Ingredients:

Peanut Butter 1 pound whitecote chocolate coating
1/2 cup peanut butter

Recipe Directions:

In the top of a double boiler, melt coating over hot, not boiling, water. Add peanut butter. and blend until smooth. Fill peanut molds almost full and chill in freezer until firm. Turn over and tap peanuts from molds. Recipe makes about 75 peanuts.
