Diet Fudge Candy Recipe

Dietary candy recipe...

This is real fudge revamped to reduce fat and calories without reducing the rich fudgy treat so many of us enjoy. Cereal crumbs add a nice crunch.

Recipe Ingredients

13-oz. can skim evaporated milk
3 tablespoons cocoa
1/4 cup butter
1 tablespoon granulated sugar replacement
Dash salt
1 teaspoon vanilla extract
2-1/2 cups unsweetened cereal crumbs
1/4 cup nuts, very finely chopped


Recipe Directions

Fudge

Combine milk and cocoa in saucepan; cook and beat over low heat until cocoa is dissolved.

Add butter, sugar replacement, salt and vanilla. Bring to a boil; reduce heat and cook for 2 minutes. Remove from heat; add cereal crumbs and work in with wooden spoon. Cool 15 minutes.

Divide in half; roll each half into a tube, 8 inch long. Roll each tube in finely chopped nuts. Wrap in waxed paper; chill overnight.

Cut into 1/4 inch slices.

Variation: Creamy Guilt-Free Fudge

This creamy fudge is everything you would expect in a fudge; creamy, very chocolate-y, and has reduced fat ingredients to take away some of the guilt!

2/3 cup low-fat sweetened condensed milk
1-1/2 cups semi-sweet chocolate chips
3/4 teaspoon vanilla extract
1 pinch salt

In a medium-sized saucepan, melt chocolate chips in sweetened condensed milk over medium-low heat. Stir in vanilla and salt. Pour chocolate mixture into ungreased 10 inch square pan. Chill several hours until set. Cut into squares. Makes 1 - 10 inch square pan.
