Wholesome Apple Raisin Muffins

Directions: In large bowl, combine 1-1/2 cups oats, flour, sugar, raisins, baking powder, baking soda, cinnamon, nutmeg and salt; mix well. In small bowl, combine applesauce, apple juice, egg whites and oil; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Fill muffin cups almost full. Sprinkle remaining 1/4 cup oats evenly over batter, patting gently. Bake 20 to 22 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes. Remove from pan. Serve warm. Recipe makes one dozen Wholesome Apple Raisin Muffins.
