Stuffed Celery Sticks Recipe
Just plain healthy recipe...
Jazz up bland celery with Neufchatel, yogurt, pineapple, carrots and sliced green onions. These stuffed celery sticks are a lot better than plain ones.
4 oz. Neufchatel cream cheese
1/4 cup low-fat vanilla yogurt
1/2 cup crushed pineapple, well drained
1/2 cup grated or shredded carrot
27 5-inch-long celery sticks
In a small bowl, stir together the Neufchatel cheese and yogurt until well combined. Stir in the pineapple, carrot, and onion until well combined.
Fill each celery stick with 2 teaspoons of the mixture. The mixture can be used immediately or covered and refrigerated for up to 24 hours before using. The filling will keep, covered, in the refrigerator for 3 to 4 days.
About Neufchatel Cheese
True Neufchatel cheese comes from France. In fact, it is named after a town in France. Neufchatel cheeses outside of France, like the U.S., are not true Neufchatel cheeses. The true Neufchatel cheeses use whole milk, not cream. The Neufchatel cheese version in America is made from cream and pasteurized milk.
Neufchatel cheese is lower in fat content than cream cheese.
