Overnight French Toast Recipe

Just plain healthy recipe...

Egg substitute and fat free half-and-half cream cut the fat dramatically in this French toast recipe. The sweet strawberries and healthful bananas more than make up for all the missing fat!

Overnight French Toast

Recipe Ingredients

1 loaf French bread
1-1/4-cup egg substitute
3/4 cup fat free half-and-half cream
1 tablespoon pure vanilla extract
1/4 teaspoon baking powder
1 20-ounce bag frozen whole strawberries, partially thawed
4 ripe bananas, sliced
3/4 cup plus 1-tablespoon sugar (divided)
1 tablespoon apple pie spice
Pinch of ground cinnamon

Recipe Directions

The night before cooking, cut bread into 1-inch slices and arrange in 9-by-13-inch non-stick baking pan.

In a bowl, beat eggs, half-and-half, vanilla and baking powder until blended. Pour over bread. Cover and refrigerate over night.

The next morning, preheat oven to 450-degrees.

Remove bread to plate. In baking pan where bread was soaking, mix strawberries (thawed enough to separate), bananas, 3/4 cup sugar and apple pie spice. Top with bread. Sprinkle with remaining tablespoon of sugar and cinnamon. Bake until toast is lightly brown, about 20 minutes.

Recipe makes six to eight servings Overnight French Toast.
