Low Fat Cherry Cobbler
Healthy Recipe

Ingredients:
7 cups pitted tart cherries, thawed, if frozen
1 cup sugar
1/4 cup cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon almond extract
Nonstick vegetable spray
1 cup all purpose flour
1/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt necessary
1 cup light sour cream
2 tablespoons milk
1 teaspoon vanilla extract
1 egg
1 tablespoon sugar

Directions:
Preheat oven to 350 degrees. Combine cherries with sugar, cornstarch and cinnamon in a heavy saucepan over medium heat. Simmer 1 minute, or until mixture thickens. Remove from heat and add almond extract. Mix thoroughly. Transfer cherry mixture to a 7x11 inch baking dish that has been sprayed with cooking spray. Set aside. Sift together next 5 ingredients in a food processor or a bowl. Stir in remaining ingredients, except remaining sugar. Blend well. Spread batter evenly over cherries. Sprinkle with remaining sugar. Bake 30 minutes, until top is golden and mixture is bubbling.

This recipe makes 10 servings Low Fat Cherry Cobbler. Due to the nature of this recipe, it adjusts the number of servings in multiples of 10 only.
