Turkey Meatball Sandwich Recipe
Just plain healthy recipe...
A turkey meatball sandwich is a real healthful treat for meatball lovers. Meatballs made with skinless ground turkey and just the white of an egg makes this quite a bit lower in fat than traditional meatballs.
1 pound skinless ground turkey breast
1/2 cup plain bread crumbs
1 egg white
2 cloves garlic, minced
3 tablespoons finely chopped parsley
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup chopped onion
1 8-oz. can whole tomatoes, drained and coarsely chopped
1 4-oz. can reduced sodium tomato sauce
1 teaspoon dried Italian seasoning
4 small hard rolls, split
2 tablespoons grated Parmesan cheese
Combine ground turkey, bread crumbs, egg white, parsley, garlic, salt and pepper in medium bowl and mix well. Form mixture into 12-16 meatballs. Spray large nonstick skillet with cooking spray and heat over medium heat. Add meatballs and cook and stir about 5 minutes or until browned. Remove meatballs from skillet.
Add onion to skillet and cook about 2-3 minutes. Stir in tomatoes, tomato sauce and Italian seasoning and bring to boil. Reduce heat to low and simmer uncovered for 15 minutes. Return meatballs to skillet and simmer covered for 15 minutes. Place 3-4 meatballs in each roll, spoon sauce over meatballs, sprinkle with cheese and serve.
Serving Suggestion: Sprinkle shredded Mozzarella cheese over sauce just before serving.

Variation: Meatball Heroes
Heat broiler. In a large nonstick skillet on medium, heat one package (12 ounces) pre-cooked frozen turkey meatballs, 1-1/2 cup red pasta sauce and 1/4-cup water to boiling. Reduce heat to medium-low and simmer, covered, five minutes or until meatballs are heated through; stir occasionally.
Meanwhile, place four hero sandwich rolls (sliced horizontally almost through) cut side up on a large cookie sheet. Sprinkle rolls iwth 1/2 to 1-cup part-skim shredded mozzarella cheese. Broil two to three minutes or until cheese melts. Spoon meatballs and sauce onto bottom of rolls; cut sandwiches in half. Serving Suggestions: Pairs well with baked potatoes, dill pickles and a lettuce wedge salad.
