Turkey Meatballs Recipe
Just plain healthy recipe...
Turkey meatballs are so good not many do not enjoy them. Make them more healthful with this recipe - ground turkey and egg substitute lower fat substantially.
1-1/3 pound ground turkey
1/2 cup egg substitute
1 cup bread crumbs
1/2 cup chopped onion
1-1/2 to 2 26-oz. jars tomato sauce
Note: How about making home made breadcrumbs?
Begin to warm sauce on low in crockpot with any seasonings you like (i.e.: parsley, oregano, minced fresh garlic or powder, left over chopped onion, etc.)
Mix together first 4 ingredients until desired consistency. Adding more or less breadcrumbs to taste. Form into balls. Heat oil in large skillet.
Brown meatballs. Don't worry about cooking all the way through.
When meatballs are browned, scoop them into sauce (getting rid of most of the oil) making sure it covers meatballs completely. Cover and cook on low for 4 to 6 hours.
Yield: 6 servings
Serving size: 2 meatballs;
Extra: Quick Salsa Turkey Sandwich
For each sandwich, coat one slice of whole wheat bread with vegetable oil spray. Place coated side down in non-stick skillet. Top with deli turkey breast meat slices, then the second slice of bread coated with vegetable cooking oil spray. Cook over medium two or three minutes per side or until cheese melts and bread is browned.
