Super Nachos Recipe
Just plain healthy recipe...
A quick microwave snack of super nachoes. tortilla chips with tasty Cheddar cheese, fiber filled refried beans and salsa.
12 large tortilla chips
1 /2 cup shredded reduced-fat Cheddar cheese
1 /4 cup fat free refried beans
2 tablespoons salsa
Arrange chips on large microwave-safe plate. Sprinkle cheese evenly over chips.
Spoon beans over chips. Top with salsa.
Microwave at medium 1-1/2 minutes. Rotate dish.
Microwave 1 to 1-1/2 minutes or until cheese is melted.

Extra: Quick Ham and Cheese Tortilla
Place a 6-inch tortilla in a small, dry, nonstick skillet. Sprinkle with 1-1/2 ounce low-fat Swiss cheese. Top with 2-ounces lean deli ham. Cook over medium-high heat until the cheese starts to melt and tortilla is lightly toasted on the bottom. Gently fold tortilla.
