Cherry Tomato Pasta Recipe
Just plain healthy recipe...
Cherry tomato pasta is a pairing of cherry tomatoes and garlic along with basil blended into whole wheat spaghetti pasta.
2 tablespoons olive oil
3 cloves garlic, sliced
1 pint cherry tomatoes, halved
1 teaspoon sugar
Salt and black pepper, to taste
1/2 cup coarsely torn fresh basil leaves
6 ounces whole wheat spaghetti
Grated Parmesan cheese (for serving) optional
Place the oil in a skillet over low heat.
Add the garlic and cook, stirring, until golden, about six to seven minutes.
Add the tomatoes, sugar, salt and pepper; raise heat to medium and cook, gently smashing some of the tomatoes with the back of a spoon (leave some whole) until the sauce is thickened, about eight minutes. Stir in the basil.
Add the pasta, combine well and serve immediately, topped with grated cheese.
Pasta Cooking Tips
Whole wheat pasta takes a minute or two longer to cook that regular semolina pasta. Start taste testing after about 8 minutes, and each minute after until it reaches the particular al dente texture you like. Some prefer their pasta more firm than others.
If you, like many of us, store your pasta in glass canisters, here's a great tip a site visitor recommended (thank you, Cheri!). After you put the pasta in the canister, cut out the cooking instructions from the box and scotch-tape them to the bottom of the canister. Just remember that if you change the type or brand of pasta in that canister to change the instructions as well!
