Porcupine Meatballs Recipe

Just plain healthy recipe...

These tasty Porcupine Meatballs are called porcupine because of the rice included in the ingredients making the meatballs resemble porcupines.

Recipe Ingredients

1/2 cup uncooked long grain brown rice
1/3 cup chopped onion
1/2 teaspoon celery salt
1/8 teaspoon black pepper
1/8 teaspoon garlic powder
1 pound lean ground round
1 15-oz can tomato sauce
3 tablespoons light, mild molasses
2 teaspoons Worcestershire sauce
1 teaspoon mustard powder
1 cup water
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce

Recipe Directions

In a bowl, combine the first six ingredients. Add beef and mix well.

Shape into 1-1/2 inch balls. In a large skillet coated with nonstick cooking spray, brown meatballs; drain.

Combine tomato sauce, water, brown sugar and Worcestershire sauce; pour over meatballs. Reduce heat; cover and simmer for one hour.
