Taco Rice Skillet

This low fat, low calorie main dish will sure to be the hit of the party. Substitue ground beef (about 1 pound) for the Boca if desired.

Ingredients:
2 pouches (1 cup each) frozen meatless ground burger
2 cups white rice, uncooked
2 cups water
1 medium tomato, chopped
1 package (1-1/4 ounce) taco seasoning mix
1/2 cup taco cheese mexican shredded cheese

Directions:
Cook ground burger in large nonstick skillet as directed on package.

Add rice, water, tomato and taco seasoning mix; stir until well blended. Bring to boil. Sprinkle with cheese; cover. Remove from heat. Let stand 5 minutes.

Serve topped with shredded lettuce and other taco toppings, if desired.

Makes four servings.
