Fruit-Filled Banana SplitsHealthy banana splits!Ingredients: 1 package (12 ounces) frozen raspberries, thawed 1/2 cup orange juice 2 tablespoons sugar 1 (1-1/4 ounce) envelope non-flavored gelatin 1 cup vanilla flavored yogurt 4 bananas 1 cup fresh blueberries 1 cup granola or toasted walnuts Directions: Strain raspberries into medium bowl, pressing gently to release all juice. (Straining should yield about 3/4-cup juice). In small saucepan, combine raspberry juice, orange juice and sugar. Sprinkle with gelatin; let stand two minutes. Over medium-low heat, stir raspberry mixture until gelatin is dissolved, about one minute. Remove from heat; let cool five minutes. Whisk in yogurt until smooth. Spoon into medium bowl; refrigerate until firm, one to one and one-half hours. Peel bananas; halve lengthwise. Place two banana halves on dessert plate or in banana split dish. Top each banana with about one-half cup raspberry mousse. Sprinkle with blueberries and granola. Serve immediately. Recipe makes four servings.
