Two-Grain Vegetable Casserole Healthy Recipe
This high fiber heart healthy recipe can be served as an entree or side dish.

Ingredients:
2 cups carrots, halved lengthwise and thinly sliced
1 cup mushrooms, fresh, quartered
1 cup soybeans, canned (or black beans)
1 cup corn kernels, canned or frozen
1 cup vegetable broth
1/2 cup pearl barley
1/3 cup fresh parsley, chopped
1/4 cup bulgur
1 small onion, chopped
1/4 teaspoon garlic salt

Directions:
In a 1-1/2 quart casserole combine all ingredients. Cover and bake in a 350 degree oven about 1 hour or until bulgur and barley are tender, stirring once halfway through the baking time.
Recipe makes 6 servings.
Per serving: 248 calories, 7g fat, 1g sat fat, 35g carbohydrates, 17g protein, 193mg sodium, 9g fiber.
