Orange Poppyseed Quick Bread

This orange-flavored quick bread is almost fat-free. The recipe originally appeared in Sandra Woodruff's book, The Secrets of Fat-Free Baking (Avery Publishing Group, 1994).

Ingredients:
2 cups whole wheat flour
1/2 cup sugar
1 teaspoon baking soda
1 tablespoon poppyseeds
1 cup orange juice
1 teaspoon vanilla extract

Directions:
Coat a loaf pan with nonstick cooking spray and preheat oven to 325 degrees. Combine dry ingredients and stir to mix well. Add the liquid ingredients and stir just until dry ingredients are moistened. Pour the mixture evenly in the loaf pan and bake for 45 minutes (or until a toothpick inserted in center of bread comes out clean). Let loaf pan sit for 10 minutes after removing from oven, then invert loaf onto a wire rack and turn rightside up. Cool before slicing and serving.

Recipe makes 16 servings.
