Low Fat Chocolate Muffins

Ingredients:
2 tablespoons butter
3/4 cup sugar
1 heaping tablespoon cocoa
1/2 teaspoon vanilla
1/2 cup boiling water
2 eggs
1-1/4 cup flour
1-1/2 teaspoon baking powder
Pinch of salt
Scant 1/2 cup chocolate mini morsels

Directions:
Cream butter, sugar and vanilla. Dissolve cocoa in boiling water. Beat cocoa mixture into butter. Combine flour, baking powder, and salt. Beat into butter-cocoa mixture. Fold in chocolate mini morsels. Bake in muffin tins for 20 minutes at 350 degrees.

Recipe makes one dozen medium-size muffins.
