"Unfried" Chicken Fried Rice
Recreate this Chinese food favorite all in one pot in only 20 minutes!
Ingredients:
1 tablespoon vegetable oil
1 pound boneless skinless chicken breast cut into bite-size pieces
1 can chicken broth
4 teaspoons soy sauce
3 cups frozen stir-fry vegetables
2 cups Minute White Rice, uncooked
Directions:
Heat oil in skillet on medium-high heat. Add chicken; cook and stir five minutes or until cooked through.
Add broth and soy sauce. Bring to a boil.
Stir in vegetables and rice; cover. Reduce heat to low; cook five minutes. Stir before serving. Sprinkle with one green onion, sliced, if desired.
Note: For extra flavor, add 2 tablespoons grated gingerroot to skillet with chicken.
