Cheesy Mac-Topped Cheese Recipe

Just plain healthy recipe...

Cheesy Mac Topped Cheese. An old favorite tops this delicious and hearty casserole. Add a salad for a well rounded meal.

Recipe Ingredients

1 14-oz. package deluxe macaroni and cheese dinner made with 2-percent milk cheese
1 pound extra lean ground round
3 cloves garlic, minced
1 pound lean ground round
1-1/2 teaspoon dried oregano leaves
1 28-oz. can diced tomatoes, not drained
1 9-oz. package frozen green beans, thawed and drained
1 cup reduced fat shredded Cheddar cheese

Recipe Directions

Preheat oven to 375 degrees. Prepare dinner as directed on package. Meanwhile, brown meat with garlic and oregano in large nonstick skillet; drain. Add tomatoes with their liquid and the beans; mix well.

Spoon meat mixture into a 13 x 9-inch baking dish; top evenly with prepared dinner. Cover with foil.

Bake 30 minutes or until heated through. Remove from oven; uncover. Sprinkle with cheese. Let stand five minutes or until cheese is melted.

Chickpeas and red bell pepper

1 cup chickpeas, rinsed and drained
1 cup chopped celery
2 carrots, chopped
1/2 cup chopped roasted red bell pepper
2 tablespoons chopped parsley
1 tablespoon lemon juice
1 tablespoon olive oil
1/8 teaspoon salt

Place all the ingredients in a serving bowl, and toss to mix.

Variation. Combine chopped fresh red bell pepper, carrots, cucumbers and scallions with lemon juice and salt. Recipe makes 4 servings.
