Blueberry Breakfast Bar Recipe

1 cup flour
1-1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup low fat milk
1/3 cup quick-cooking rolled oats
1/2 pound frozen unsweetened blueberries
3/4 cup wheat, corn or rice cereal squares (such as Crispix or Corn or Wheat Chex)
Have all ingredients at room temperature. Preheat oven to 350 degrees.
In bowl, combine flour, baking powder and salt. Place butter and sugar in mixer and with paddle attachment, mix at low speed until light and fluffy. Add eggs and vanilla; beat until smooth.
Add milk, flour mixture and oats; beat until blended, scraping down sides of bowl as necessary. Stir in blueberries (batter will be stiff). Spread evenly in greased 13 x 9-inch pan. Sprinkle lightly crumbled cereal over top.
Bake in preheated oven until golden brown and tester comes out clean, about 40 minutes. Cool in pan. Cut in pan into 2-inch squares.
Note: You can use margarine in place of the butter, if that is your preference.
