Blueberry Breakfast Bar

Recipe Ingredients

1 cup flour
1 /2 tablespoon baking powder
1 /2 teaspoon salt
1/2 cup margarine, room temperature
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup low fat milk
1/3 cup quick-cooking rolled oats
1/2 pound frozen unsweetened blueberries
3/4 cup wheat, corn or rice cereal squares (such as Crispix or Corn or Wheat Chex)


Recipe Directions

Blueberries Have all ingredients at room temperature. Preheat oven to 350 degrees.

In bowl, combine flour, baking powder and salt. Place margarine and sugar in mixer and with paddle attachment, mix at low speed until light and fluffy. Add eggs and vanilla; beat until smooth.

Add milk, flour mixture and oats; beat until blended, scraping down sides of bowl as necessary. Stir in blueberries (batter will be stiff). Spread evenly in greased 13 x 9-inch pan. Sprinkle lightly crumbled cereal over top.

Bake in preheated oven until golden brown and tester comes out clean, about 40 minutes. Cool in pan. Cut in pan into 2-inch squares.

Recipe makes 58 bars.
