Low Fat Chocolate Muffins Recipe

The chocolately rich taste of these Low Fat Chocolate Muffins may surprise you. Cocoa powder and chocolate chips team up for lots of chocolate flavor.
2 tablespoons butter
3/4 cup sugar
1-1/2 tablespoon cocoa powder
1/2 teaspoon pure vanilla extract
1/2 cup boiling water
2 eggs or 1/2 cup liquid egg substitute
1-1/4 cup flour
1-1/2 teaspoon baking powder
Pinch of salt
1/2 cup chocolate mini morsels
Preheat oven to 350 degrees.
Cream butter, sugar and vanilla. Dissolve cocoa in boiling water. Beat cocoa mixture into butter.
Combine flour, baking powder, and salt. Beat into butter-cocoa mixture. Fold in chocolate mini morsels.
Bake in muffin tins for 20 minutes.
Yield: 12 servings
